Chef Raphael Serrano discovered his culinary passion as a child, watching his parents cook and taking mental notes on how different spices transformed the taste of food. This early fascination led him to experiment in the kitchen and realize that cooking was not just a hobby, but a true passion that provided him solace and relief from stress. In 2001, he took a significant step towards honing his craft by enrolling in the California Culinary Academy, where he expanded his culinary knowledge beyond Filipino cuisine to explore global flavors.
From 2002 onwards, Chef Raphael Serrano trained in several prestigious establishments, including Duke’s Waikiki, Waikiki Beach Marriott, and Hilton Hotel. Despite a detour into a career as an Industrial Electrician, Chef Raphael never lost his love for cooking. After many years of hard labor, he returned to the kitchen to pursue his passion full-time, launching his own catering and private chef business.
Chef Raphael is particularly passionate about traditional Hawaiian poke, a dish he fell in love with during his time in Hawaii. Disappointed by the lack of authentic poke in the Bay Area, he made it his mission to bring the true Hawaiian poke experience to his community. He now serves fresh-to-order poke at Oracle Park during San Francisco Giants home games, with stands on the promenade, club, and field club levels of one of the most iconic stadiums in sports. Recently, he also expanded his reach by opening a stand on the club level at Cal Berkeley Stadium, further cementing his impact in the world of sports dining.
