The Waffle Roost started in the summer of 2012. The owner, Justin, wanted to create the best version of the amazing sweet and savory combo that is fried chicken and waffles. He bought and renovated the first truck in his driveway, and hit the road shortly after. After 11 successful years, The Waffle Roost is still a Chicago fan favorite for chicken and waffles. Justin Funamara is the owner of The Waffle Roost. He worked in the restaurant industry since 2003, gaining knowledge and experience throughout, at a number of fantastic (and not so fantastic) locations. In 2012, Justin took the independent plunge into the food truck business and created the beloved, Waffle Roost.
